Passover celebrates spring, freedom, and matzo balls. What’s not to love?

In deference to the holiday’s ban on flour, hosts do desperate things. Like clog cake batter with matzo meal. Or peel open a can of coconut macaroons. Or buy “fruit” slices.
Children wonder if actual fruit has been mummified into the gritty jelly candy. Grownups know better. Both ask: Why?
On this night of many questions, here’s one answer: toffee. Caramel-sticky, chocolate- heavy, nut-happy, and, when bolstered by matzo, square with the rules. Yet another reason to celebrate.
